Wraps (makes 6)

  • 1 cup wheat flour

  • ½ cup boiled and mashed potato

  • ½ cup vegetable purée (Blend any vegetable of choice with a little water, such as beetroot, carrot, or spinach.)

Assembly:

  • ½ cup chipotle mayo

  • ½ cup green chutney

  • ½ teaspoon magic masala

Filling:

  • 1 cup cabbage, thinly sliced

  • ¼ cup tomato, de-seeded & sliced

  • ½ cup capsicum, julienned

Method:

  1. For the Wrap:
    Combine wrap ingredients in a mixing bowl and knead into a dough. Let it rest for 10 minutes. Then divide it into 6 balls, roll them flat, and cook like normal chapatis (SEO modified).

  2. For the Vegetable Patties:
    Heat a pot, add hing, ginger, and green chili, and sauté for 1 minute. Add boiled potatoes, green peas, cauliflower, carrot, and capsicum, and cook for 5 minutes on low flame. Turn off the stove, add cardamom and salt, and mix well (SEO modified). Allow to cool, then divide into 12 balls and shape into rectangular patties.

  3. Cook the Patties:
    Coat the patties with flaxseed powder and cook on an iron tawa for 5 minutes on low flame, flipping until they’re crisp.
